Many of us can’t seem to get enough greens in our diet.  This easy recipe gets these essential nutrients into our system as easy as 1, 2, 3!

You Need:
A mix of greens of your choice: kale, collard greens, spinach, watercress, bok choy, parsley, broccoli, celery, brussel sprouts, string beans, snow peas, etc.
Optional: A pinch of herbs of your choice (thyme, oregano, basil, majoram, cilantro, rosemary, cayenne, etc)
A tablespoon of sour cream

You Do:
Steam or boil all vegetables together until tender (no longer than 10 minutes).  In a blender, add about half a cup of water (add more water for a thinner soup, less water for a thicker soup) and steamed veggies and herbs (optional).  Blend until smooth.  Add a dollop of sour cream.  Can be served hot or cold.

Why Greens are Important:
Greens are rich in vitamins and minerals, providing vital nutrition.  Greens are immune strengthening, fight depression, cleanse the liver of toxins, clear congestion (especially in the lungs), and reduce mucus.  They also provide a healthy boost of energy when feeling sluggish.

1 inch of fresh ginger root, peeled and cut in half
3-4 cloves of garlic, peeled & cut in half
Honey to taste

You Do:
Add lemon, ginger & garlic to a small pot with water.  Bring to boil.  Cover and simmer for 20 minutes. Drink the broth, adding lemon to taste.  Dink 1-2 cups, then bundle up warm and sleep under blankets.

Why it Works:
Lemon is detoxifying, flushing the illness through the system; ginger heats the body, bringing illness to the surface; garlic is a natural antibiotic; honey soothes sore throats & is a natural sweetener.  Note: if you have high blood pressure, use less ginger.
